- 1 large onion, diced
- 2 carrots, sliced
- 2 stalks celery, diced
- 4 cloves garlic, minced
- 1 cup dry red wine
- 4 cups beef broth
- 2 bay leaves
- 1 teaspoon thyme
- 2 tablespoons olive oil
- 1 tablespoon flour (optional, for thickening)
Instructions
- Prep Your Ingredients: Cut all veggies and brown the short ribs.
- Sear the Short Ribs: Heat olive oil in a large pot over medium-high heat. Dry and season short ribs. Brown on all sides for 3-4 minutes.
- Sauté Aromatics: Remove short ribs and add onion, carrots, and celery. Sauté for 5-7 minutes.
- Add Garlic and Flour: Stir in minced garlic, cooking for another minute. Add flour if desired.
- Deglaze with Wine: Pour in red wine, scraping the pot for flavorful bits. Simmer for 5 minutes.
- Combine Everything: Return short ribs to the pot, add beef broth, bay leaves, and thyme. Bring to a simmer.
- Slow Cook for Flavor: Lower heat, cover, and simmer for 2-3 hours.
- Taste and Adjust: Adjust seasoning before serving.
- Serve Hot: Ladle into bowls and serve with crusty bread or mashed potatoes.
