  • 1 large onion, diced

  • 4 cups beef broth
  • 2 bay leaves
  • 1 teaspoon thyme
  • 2 tablespoons olive oil
  • 1 tablespoon flour (optional, for thickening)

Instructions

  1. Prep Your Ingredients: Cut all veggies and brown the short ribs.
  2. Sear the Short Ribs: Heat olive oil in a large pot over medium-high heat. Dry and season short ribs. Brown on all sides for 3-4 minutes.
  3. Sauté Aromatics: Remove short ribs and add onion, carrots, and celery. Sauté for 5-7 minutes.
  4. Add Garlic and Flour: Stir in minced garlic, cooking for another minute. Add flour if desired.
  5. Deglaze with Wine: Pour in red wine, scraping the pot for flavorful bits. Simmer for 5 minutes.
  6. Combine Everything: Return short ribs to the pot, add beef broth, bay leaves, and thyme. Bring to a simmer.
  7. Slow Cook for Flavor: Lower heat, cover, and simmer for 2-3 hours.
  8. Taste and Adjust: Adjust seasoning before serving.
  9. Serve Hot: Ladle into bowls and serve with crusty bread or mashed potatoes.
