Ingredients

  • 1/2 cup unsalted butter, softened
  • 8 oz cream cheese, softened
  • 1 box (3.4 oz) pistachio pudding mix
  • 2 cups powdered sugar
  • 2 large eggs
  • 1 1/2 cups all-purpose flour
  • 1/2 cup whole milk
  • 1/2 cup chopped pistachios (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a mixing bowl, beat together the softened cream cheese and butter until smooth. Gradually mix in the powdered sugar until fluffy.
  3. Add eggs one at a time, mixing well after each addition.
  4. Mix in pistachio pudding until well combined.
  5. Alternately blend in flour and milk, starting and ending with flour.
  6. Pour the batter into the prepared baking dish and spread evenly.
  7. Bake for 35-40 minutes, or until the edges are golden brown. The center should remain gooey.
  8. Allow to cool for at least 15 minutes before slicing and serve with a sprinkle of chopped pistachios on top.

Notes

Serve warm or at room temperature. Pairs well with whipped cream or vanilla ice cream.
