- 1/2 cup unsalted butter, softened
- 8 oz cream cheese, softened
- 1 box (3.4 oz) pistachio pudding mix
- 2 cups powdered sugar
- 2 large eggs
- 1 1/2 cups all-purpose flour
- 1/2 cup whole milk
- 1/2 cup chopped pistachios (for garnish)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
- In a mixing bowl, beat together the softened cream cheese and butter until smooth. Gradually mix in the powdered sugar until fluffy.
- Add eggs one at a time, mixing well after each addition.
- Mix in pistachio pudding until well combined.
- Alternately blend in flour and milk, starting and ending with flour.
- Pour the batter into the prepared baking dish and spread evenly.
- Bake for 35-40 minutes, or until the edges are golden brown. The center should remain gooey.
- Allow to cool for at least 15 minutes before slicing and serve with a sprinkle of chopped pistachios on top.
Notes
Serve warm or at room temperature. Pairs well with whipped cream or vanilla ice cream.
