Ingredients

  • Yukon gold or russet potatoes
  • 2 cups heavy cream (or half-and-half)
  • 1 cup sharp cheddar cheese, shredded
  • 1 cup Gruyère cheese, shredded
  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • Fresh herbs (thyme or rosemary), chopped
  • A pinch of nutmeg
  • Salt and pepper, to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice the potatoes into thin rounds, about 1/8-inch thick.
  3. Sauté the onions in butter until translucent, about 5 minutes. Add minced garlic and cook for an additional minute.
  4. In a saucepan, heat the cream over medium heat and combine with sautéed onion and garlic mixture. Gradually whisk in the cheese until melted and smooth. Season with salt, pepper, and nutmeg.
  5. Layer the potatoes in a greased baking dish. Pour a layer of cheese sauce over the potatoes, then repeat the layers finishing with sauce on top.
  6. Sprinkle additional cheese and a pat of butter on top.
  7. Cover with foil and bake for 45 minutes. Remove foil and bake for an additional 15-20 minutes until golden brown and tender.
  8. Cool slightly before serving.
