- Yukon gold or russet potatoes
- 2 cups heavy cream (or half-and-half)
- 1 cup sharp cheddar cheese, shredded
- 1 cup Gruyère cheese, shredded
- 2 tablespoons butter
- 3 cloves garlic, minced
- Fresh herbs (thyme or rosemary), chopped
- A pinch of nutmeg
- Salt and pepper, to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Slice the potatoes into thin rounds, about 1/8-inch thick.
- Sauté the onions in butter until translucent, about 5 minutes. Add minced garlic and cook for an additional minute.
- In a saucepan, heat the cream over medium heat and combine with sautéed onion and garlic mixture. Gradually whisk in the cheese until melted and smooth. Season with salt, pepper, and nutmeg.
- Layer the potatoes in a greased baking dish. Pour a layer of cheese sauce over the potatoes, then repeat the layers finishing with sauce on top.
- Sprinkle additional cheese and a pat of butter on top.
- Cover with foil and bake for 45 minutes. Remove foil and bake for an additional 15-20 minutes until golden brown and tender.
- Cool slightly before serving.

Ensure potatoes are uniformly sliced for even cooking. Adjust baking times according to your oven’s characteristics.
