- 4 boneless, skinless chicken breasts
- 1 cup fresh cremini mushrooms, sliced
- 1 cup fresh button mushrooms, sliced
- 4 strips smoky bacon, diced
- 1 cup Swiss cheese, shredded
- 1 cup Monterey Jack cheese, shredded
- 4 cloves garlic, minced
- 2 tablespoons fresh rosemary, chopped
- 2 tablespoons fresh thyme, chopped
- 2 tablespoons olive oil
- 1 cup chicken broth
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- Season chicken breasts with salt and pepper. Optionally, marinate with olive oil and herbs for 1 hour.
- In a skillet over medium heat, add olive oil. Sauté minced garlic and sliced mushrooms until golden, about 5–7 minutes.
- Add diced bacon to the skillet and cook until crispy.
- Remove from heat and combine sautéed mushrooms and bacon with the chicken in a baking dish.
- Layer with shredded Swiss and Monterey Jack cheese.
- Bake for 25–30 minutes or until chicken is cooked through and cheese is golden.
- Garnish with freshly chopped herbs before serving.
Notes
For a healthier alternative, substitute turkey or portobello mushrooms. Consider turkey bacon and smoked gouda for variations.
