Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup fresh cremini mushrooms, sliced
  • 1 cup fresh button mushrooms, sliced
  • 4 strips smoky bacon, diced
  • 1 cup Swiss cheese, shredded
  • 1 cup Monterey Jack cheese, shredded
  • 4 cloves garlic, minced
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 2 tablespoons olive oil
  • 1 cup chicken broth
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Season chicken breasts with salt and pepper. Optionally, marinate with olive oil and herbs for 1 hour.
  3. In a skillet over medium heat, add olive oil. Sauté minced garlic and sliced mushrooms until golden, about 5–7 minutes.
  4. Add diced bacon to the skillet and cook until crispy.
  5. Remove from heat and combine sautéed mushrooms and bacon with the chicken in a baking dish.
  6. Layer with shredded Swiss and Monterey Jack cheese.
  7. Bake for 25–30 minutes or until chicken is cooked through and cheese is golden.
  8. Garnish with freshly chopped herbs before serving.

Notes

For a healthier alternative, substitute turkey or portobello mushrooms. Consider turkey bacon and smoked gouda for variations.
