Description
A vibrant and flavorful dish that embodies Southern heritage, featuring flaky, succulent shrimp coated in a spicy, golden crust.
Ingredients
Scale
- 1 pound large shrimp, cleaned and deveined
- 1 cup cornmeal
- 2 tablespoons Cajun seasoning
- 2 large eggs
- Oil for frying (peanut or vegetable)
Instructions
- Prepare the shrimp by cleaning and deveining them, leaving the tails on.
- Set up a breading station: whisk eggs with a dash of salt and pepper in one bowl and combine cornmeal with Cajun seasoning in another.
- Dip each shrimp into the egg mixture, then coat it in the cornmeal mixture until well-covered.
- Heat enough oil in a skillet over medium-high heat to cover the bottom (about half an inch).
- Carefully add shrimp to the hot oil without overcrowding, frying for 2-3 minutes on each side until golden brown and crispy.
- Remove shrimp with a slotted spoon and drain on paper towels.
- Serve hot, garnished with fresh herbs and a squeeze of lemon.
Notes
Ensure oil is at the right temperature to avoid soggy shrimp. Fry in batches to maintain crispiness.
