Instructions

  1. Prepare the shrimp by cleaning and deveining them, leaving the tails on.
  2. Set up a breading station: whisk eggs with a dash of salt and pepper in one bowl and combine cornmeal with Cajun seasoning in another.
  3. Dip each shrimp into the egg mixture, then coat it in the cornmeal mixture until well-covered.
  4. Heat enough oil in a skillet over medium-high heat to cover the bottom (about half an inch).
  5. Carefully add shrimp to the hot oil without overcrowding, frying for 2-3 minutes on each side until golden brown and crispy.
