- 4 Chicken Leg Quarters or Thighs
- 1 cup Plain Yogurt (or Greek yogurt)
- 2 tablespoons Fresh Lemon Juice
- 4 cloves Fresh Garlic, minced
- 1 tablespoon Fresh Ginger, minced
- 1 teaspoon Cumin
- 1 teaspoon Coriander
- 1 tablespoon Paprika
- 1 teaspoon Turmeric
- 1 teaspoon Cayenne Pepper (or a pinch of chili powder)
- Salt, to taste
- 2 tablespoons Vegetable or Olive Oil
Instructions
- In a large mixing bowl, whisk together the yogurt, lemon juice, minced garlic, minced ginger, and all spices until well combined. Add salt to taste.
- Pat the chicken dry and make shallow cuts in the meat to help the marinade penetrate. Add the chicken to the marinade, ensuring it is well coated. Refrigerate for at least 2 hours, preferably overnight.
- Preheat your oven to 425°F (220°C) for about 30 minutes before cooking.
- Place the chicken pieces on a lined baking tray or in a cast-iron skillet. Drizzle a little oil over the chicken for extra flavor. Roast for 25-30 minutes, turning halfway through. Broil for the last 5 minutes for a beautiful char.
- Ensure the chicken reaches an internal temperature of 165°F (74°C). Allow to rest for about 5 minutes before serving. Garnish with fresh cilantro and lemon wedges.
Notes
Marinate the chicken for the best flavor. You can also grill instead of baking for a smoky flavor.
