Instructions
- Preheat the oven to 350°F (175°C).
- Grease and flour two 9-inch round cake pans.
- In a bowl, whisk together almond flour, all-purpose flour, baking powder, and salt.
- Cream together softened butter and sugar until light and fluffy.
- Add eggs one at a time, mixing well, then add vanilla extract.
- Slowly add dry mixture to the creamed mixture, alternating with milk, until just combined.
- Pour batter into prepared pans and smooth the tops.
- Bake for 25-30 minutes, or until a toothpick comes out clean.
- Cool cakes in pans for 10 minutes, then turn out onto wire racks to cool completely.
- Prepare the filling by whisking mascarpone cheese, sugar, and vanilla together until smooth.
- Assemble the cake by spreading mascarpone filling between the layers and dust with powdered sugar and toasted almonds before serving.
