- 200g ramen noodles

- 1 cup carrots, julienned
- 1 cup bok choy, chopped
- 2 tablespoons soy sauce
- 2 soft-boiled eggs, for topping
- 1 tablespoon sesame seeds, for garnish
- Fresh herbs (cilantro or basil), for garnish
Instructions
- Prep your ingredients by slicing chicken, chopping garlic, ginger, carrots, and bok choy.
- Heat oil in a skillet over medium-high heat, add chicken and chili oil; cook until golden brown.
- Add garlic and ginger, stirring until fragrant (about 1 minute).
- Pour in broth and soy sauce, bring to a boil, then reduce to a simmer.
- In a separate pot, boil ramen noodles according to package instructions, then drain and rinse.
- Combine cooked noodles with broth mixture and simmer briefly to blend flavors.
- Stir in carrots and bok choy, cooking until tender-crisp.
- Serve ramen in bowls, topping with soft-boiled eggs, sesame seeds, and fresh herbs. Drizzle with additional chili oil if desired.
Notes
Adjust the heat from chili oil according to your spice tolerances. You can substitute chicken with tofu or shrimp for different variations.
