Ingredients

- 1 cup unsalted butter, at room temperature
- 3/4 cup granulated sugar
- 2 cups all-purpose flour
- 1 cup maraschino cherries, finely chopped
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C).
- Cream together the softened butter and granulated sugar until light and fluffy (about 3-5 minutes).
- Mix in the vanilla extract until thoroughly combined.
- Gradually add flour and salt. Stir until combined but do not overmix.
- Carefully fold in the chopped maraschino cherries.
- Scoop tablespoon portions of dough, roll them into balls, and place them on a lined baking sheet.
- Bake for 10-12 minutes or until the edges are lightly golden.
- Let cool for a couple of minutes on the sheet before transferring to a wire rack.
Notes
For a different flavor, try substituting almond extract for vanilla, or add chopped nuts like pecans or walnuts.
