- 1 cup unsalted butter, softened
- 1 cup brown sugar
- 1 cup granulated sugar
- 1 cup creamy peanut butter
- 2 large eggs
- 2 cups rolled oats
- 1 cup all-purpose flour
- 1/2 teaspoon salt
- 1 cup chocolate chips
- 1 cup chopped nuts (optional)
- 1 cup dried fruits (raisins, cranberries, etc.)
Instructions
- Preheat the oven to 350°F (175°C).
- Grease a 9×13 inch baking dish or line with parchment paper.
- Cream together butter, brown sugar, granulated sugar, and peanut butter until smooth.
- Add eggs, mixing well after each addition.
- In another bowl, whisk together oats, flour, and salt. Gradually stir into the wet ingredients.
- Fold in chocolate chips, nuts, and dried fruits.
- Spoon the mixture into the baking pan and spread evenly.
- Bake for 20 to 25 minutes, or until golden brown.
- Cool for 10 minutes in the pan, then transfer to a wire rack to cool completely before cutting into squares.
Notes
For nut-free, substitute nuts with sunflower seeds. For gluten-free, use gluten-free oats and appropriate flour.
