Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1 cup granulated sugar
  • 1 cup creamy peanut butter
  • 2 large eggs
  • 2 cups rolled oats
  • 1 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1 cup chocolate chips
  • 1 cup chopped nuts (optional)
  • 1 cup dried fruits (raisins, cranberries, etc.)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease a 9×13 inch baking dish or line with parchment paper.
  3. Cream together butter, brown sugar, granulated sugar, and peanut butter until smooth.
  4. Add eggs, mixing well after each addition.
  5. In another bowl, whisk together oats, flour, and salt. Gradually stir into the wet ingredients.
  6. Fold in chocolate chips, nuts, and dried fruits.
  7. Spoon the mixture into the baking pan and spread evenly.
  8. Bake for 20 to 25 minutes, or until golden brown.
  9. Cool for 10 minutes in the pan, then transfer to a wire rack to cool completely before cutting into squares.

Notes

For nut-free, substitute nuts with sunflower seeds. For gluten-free, use gluten-free oats and appropriate flour.
