Ingredients

  • 1 wheel brie cheese
  • 1 cup raw or roasted pistachios, chopped
  • 1/2 cup fig jam
  • 1 egg, beaten (or plant-based milk with flour for vegan option)
  • 1 tablespoon fresh herbs (thyme or rosemary), chopped
  • Salt to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Slice the brie into rounds, approximately ½-inch thick.
  3. In a bowl, combine the chopped pistachios, salt, and chopped herbs.
  4. Dip each brie round in the egg wash, then coat in the pistachio mixture.
  5. Place the coated rounds on a parchment-lined baking sheet, spaced about an inch apart.
  6. Bake for 10-12 minutes or until golden brown and bubbling.
  7. Meanwhile, warm the fig jam in a small saucepan until smooth.
  8. Remove the brie from the oven and drizzle with the warmed fig jam.
  9. Serve immediately with crusty bread, crackers, or apple slices.
