- 8 oz white chocolate, melted
- 2 cups fresh cranberries
- 1 cup granulated sugar
- 1 1/2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 3 large eggs
- 2 tsp vanilla extract
Instructions
- Prepare the crust by mixing the graham cracker crumbs with melted butter and sugar until it resembles wet sand. Press firmly into a 9-inch springform pan and bake at 325°F (160°C) for 10 minutes. Allow to cool completely.
- Gently melt the white chocolate in a microwave or double boiler; let cool slightly.
- In a large bowl, beat the cream cheese until creamy, then add sugar and mix well.
- Incorporate the eggs, one at a time, mixing after each addition, then add melted white chocolate and vanilla extract until smooth.
- Fold in cranberries carefully.
- Pour cheesecake mixture into the cooled crust, spreading evenly.
- Bake for 50-60 minutes at 325°F (160°C) until set, with a slight jiggle in the center; turn off oven and let cheesecake cool inside for 1 hour.
- Chill in the refrigerator for at least 4 hours, preferably overnight, then serve.
Notes
For best results, allow cream cheese and eggs to reach room temperature before mixing. Consider using a water bath to prevent cracking.
