Ingredients

  • 8 oz white chocolate, melted
  • 2 cups fresh cranberries
  • 1 cup granulated sugar
  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 3 large eggs
  • 2 tsp vanilla extract

Instructions

  1. Prepare the crust by mixing the graham cracker crumbs with melted butter and sugar until it resembles wet sand. Press firmly into a 9-inch springform pan and bake at 325°F (160°C) for 10 minutes. Allow to cool completely.
  2. Gently melt the white chocolate in a microwave or double boiler; let cool slightly.
  3. In a large bowl, beat the cream cheese until creamy, then add sugar and mix well.
  4. Incorporate the eggs, one at a time, mixing after each addition, then add melted white chocolate and vanilla extract until smooth.
  5. Fold in cranberries carefully.
  6. Pour cheesecake mixture into the cooled crust, spreading evenly.
  7. Bake for 50-60 minutes at 325°F (160°C) until set, with a slight jiggle in the center; turn off oven and let cheesecake cool inside for 1 hour.
  8. Chill in the refrigerator for at least 4 hours, preferably overnight, then serve.

Notes

For best results, allow cream cheese and eggs to reach room temperature before mixing. Consider using a water bath to prevent cracking.
