Ingredients

  • 1 cup Unsalted Butter, softened
  • 1 cup Granulated Sugar
  • 1 cup Brown Sugar
  • 4 Eggs
  • 3 cups All-Purpose Flour
  • 1 tsp Baking Powder
  • 1 tsp Baking Soda
  • 1/2 tsp Salt
  • 1 cup Buttermilk
  • 1 cup Toasted Pecans, chopped
  • 1 tsp Vanilla Extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. Toast the pecans on a baking sheet for 5-7 minutes until fragrant.
  3. In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy, about 3-4 minutes.
  4. Beat in the eggs one at a time, then mix in the vanilla extract.
  5. In another bowl, whisk together the flour, baking powder, baking soda, and salt.
  6. Gradually add the dry ingredients to the butter mixture, alternating with buttermilk, and mix just until combined.
  7. Fold in the toasted pecans.
  8. Divide the batter between the prepared pans and tap to eliminate air bubbles. Bake for 25-30 minutes or until a toothpick comes out clean.
  9. Cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
  10. For the caramel frosting, combine sugar and butter in a saucepan over medium heat until melted. Stir in heavy cream and simmer until thickened.
  11. Once the cakes are cool, drizzle the caramel frosting over the top of one layer, place the second layer on top, and drizzle more glaze on top.
  12. Slice and serve with loved ones.

Notes

Ensure butter is at room temperature for better aeration. Sift flour to avoid lumps. Do not overmix the batter.
