- 1 cup Unsalted Butter, softened
- 1 cup Granulated Sugar
- 1 cup Brown Sugar
- 4 Eggs
- 3 cups All-Purpose Flour
- 1 tsp Baking Powder
- 1 tsp Baking Soda
- 1/2 tsp Salt
- 1 cup Buttermilk
- 1 cup Toasted Pecans, chopped
- 1 tsp Vanilla Extract
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- Toast the pecans on a baking sheet for 5-7 minutes until fragrant.
- In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy, about 3-4 minutes.
- Beat in the eggs one at a time, then mix in the vanilla extract.
- In another bowl, whisk together the flour, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the butter mixture, alternating with buttermilk, and mix just until combined.
- Fold in the toasted pecans.
- Divide the batter between the prepared pans and tap to eliminate air bubbles. Bake for 25-30 minutes or until a toothpick comes out clean.
- Cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
- For the caramel frosting, combine sugar and butter in a saucepan over medium heat until melted. Stir in heavy cream and simmer until thickened.
- Once the cakes are cool, drizzle the caramel frosting over the top of one layer, place the second layer on top, and drizzle more glaze on top.
- Slice and serve with loved ones.
Notes
Ensure butter is at room temperature for better aeration. Sift flour to avoid lumps. Do not overmix the batter.
