Ingredients

- 2 cups heavy cream
- 1/2 cup sugar
- 1/4 cup fresh lemon juice
- 1 tablespoon lemon zest
- 2 teaspoons gelatin (or agar-agar for vegetarian option)
- Pinch of salt
Instructions
- In a saucepan, whisk together heavy cream, sugar, lemon juice, and zest over medium heat until the sugar is dissolved.
- In a small bowl, sprinkle gelatin over cold water and let it bloom for about 5 minutes.
- Once the cream mixture is warm, stir in the bloomed gelatin until fully dissolved.
- Pour the mixture into molds or dessert cups, cover with plastic wrap, and refrigerate for at least 4 hours or overnight.
- Once set, run a knife along the edges and invert onto a plate, or serve in the cups, garnished with fresh berries or mint.
Notes
For added flavor, consider infusing the cream with herbs during heating. Serve with seasonal fruits for a colorful presentation.
