Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 1 cup buttermilk
  • 1 cup seasoned panko breadcrumbs
  • 1/2 cup cornstarch
  • 2 eggs
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • Salt and pepper to taste
  • Vegetable oil for frying or olive oil for baking

Instructions

  1. Marinate the chicken in buttermilk mixed with salt, pepper, and spices for at least 30 minutes.
  2. In another bowl, mix breadcrumbs with additional spices and cornstarch.
  3. Whisk together the eggs in a separate bowl to create an egg wash.
  4. Coat each chicken piece by dipping it into the egg wash, then into the breadcrumb mixture.
  5. For frying, heat the oil in a deep pan over medium-high heat. Fry nuggets for 4-5 minutes on each side until golden brown.
  6. For baking, preheat the oven to 400°F (200°C) and bake for 15-20 minutes, flipping halfway through.
