- 4 large eggs, separated
- 1/2 cup whole milk (or almond milk)
- 1 cup all-purpose flour (or oat flour)
- 2 tsp baking powder
- 2 tbsp sugar (or maple syrup)
- 1 tsp vanilla extract
- Butter or oil for greasing the pan
Instructions
- Separate the egg yolks from the whites in two bowls. Beat the yolks until they lighten in color, then mix in sugar, milk, and vanilla.
- Fold in the flour and baking powder until no lumps remain.
- In a separate bowl, beat the egg whites until stiff peaks form.
- Gently fold the whipped egg whites into the yolk mixture.
- Preheat a nonstick skillet over medium-low heat and lightly grease with butter or oil.
- Scoop about 1/2 cup of batter onto the skillet and cover with a lid. Cook for 4-5 minutes until golden, then flip and cook for another 2-3 minutes.
- Serve stacked high, drizzled with syrup or topped with fruits.
Notes
For added flavor, consider topping with fresh fruits or a sprinkle of powdered sugar. Avoid overmixing to keep the pancakes fluffy!
