Description

A rich and creamy cake made with delicate layers of crepes and coffee-infused coconut cream, perfect for any gathering.


Ingredients

  • 1 cup all-purpose flour
  • 3 eggs
  • 1 cup whole milk
  • 1 cup full-fat coconut milk
  • 2 cups freshly whipped cream
  • 8 oz cream cheese
  • 1/2 cup sweetened condensed milk
  • 1 cup brewed coffee or espresso

Instructions

  1. In a bowl, whisk together flour, eggs, milk, and coconut milk until smooth. Allow the batter to rest for about 30 minutes.
  2. Heat a non-stick skillet over medium heat and lightly grease it. Pour in 1/4 cup of batter, swirling to coat the pan. Cook until the edges lift and the crepe is lightly golden, about 1–2 minutes. Flip and cook the other side for another minute.
  3. In a separate bowl, combine whipped cream, cream cheese, and sweetened condensed milk. Stir in brewed coffee until fully combined.
  4. On a serving plate, layer the crepes by adding one crepe and spreading a layer of the filling on top. Repeat until all crepes and filling are used.
  5. Use any remaining filling to frost the top and sides of the cake.
  6. Refrigerate for at least 120 minutes before serving.

Notes

Garnish the cake with shredded coconut or cocoa powder. Best served with coffee or herbal tea.
