Description

Ingredients

  • 1 cup Bell Peppers (mixed colors, cut into 1-inch pieces)
  • 1 cup Mushrooms (button or cremini)
  • 1 cup Zucchini (cut into 1-inch pieces)
  • 1 cup Cherry Tomatoes
  • 1 cup Red Onions (cut into 1-inch pieces)
  • 2 tablespoons Olive Oil
  • 1 teaspoon minced Garlic
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 1 tablespoon fresh Herbs (parsley, basil, or rosemary)

Instructions

  1. Soak the wooden skewers in water for about 30 minutes.
  2. Cut all vegetables into approximately the same size (1-inch pieces).
  3. Toss chopped veggies in a bowl with olive oil, minced garlic, salt, pepper, and herbs. Marinate for at least 30 minutes.
  4. Thread the vegetables onto the skewers, alternating colors for presentation.
  5. Preheat the grill to medium-high temperature.
  6. Grill the skewers for about 10-15 minutes, turning occasionally until evenly charred.
  7. Drizzle with extra olive oil and garnish with herbs before serving.
