A delightful Tiramisu Cake Roll that combines rich espresso, creamy mascarpone, and a hint of cocoa for a unique twist on the classic dessert.

- 4 large eggs
- 1 cup granulated sugar
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1/2 cup espresso (or brewed coffee)
- 1 cup mascarpone cheese
- 1/2 cup heavy cream
- 1/4 cup cocoa powder
Instructions
- Preheat your oven to 350°F (175°C). Grease and line a 10×15-inch jelly roll pan with parchment paper.
- In a bowl, whisk together eggs and sugar until pale and fluffy. Gradually fold in the flour and baking powder until just combined.
- Spread the batter evenly in the prepared pan. Bake for 10-12 minutes, until lightly golden and springs back when touched.
- Dust the cake with powdered sugar as soon as it comes out of the oven. Carefully roll the warm cake in the parchment paper to create a log shape. Allow it to cool completely.
- In a separate bowl, whip together the mascarpone cheese and heavy cream until smooth. Gradually add sugar and espresso until well combined.
- Once the cake has cooled completely, unroll it gently and spread the creamy filling evenly across the surface.
- Roll up the cake again, this time without the parchment. Wrap it in plastic wrap and refrigerate for a couple of hours to set.
- Slice into rounds, dust with cocoa powder, and enjoy!
Notes
For a variation, use dairy-free alternatives like coconut cream instead of mascarpone.
