Description

A delightful Tiramisu Cake Roll that combines rich espresso, creamy mascarpone, and a hint of cocoa for a unique twist on the classic dessert.


Ingredients

  • 4 large eggs
  • 1 cup granulated sugar
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 cup espresso (or brewed coffee)
  • 1 cup mascarpone cheese
  • 1/2 cup heavy cream
  • 1/4 cup cocoa powder

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line a 10×15-inch jelly roll pan with parchment paper.
  2. In a bowl, whisk together eggs and sugar until pale and fluffy. Gradually fold in the flour and baking powder until just combined.
  3. Spread the batter evenly in the prepared pan. Bake for 10-12 minutes, until lightly golden and springs back when touched.
  4. Dust the cake with powdered sugar as soon as it comes out of the oven. Carefully roll the warm cake in the parchment paper to create a log shape. Allow it to cool completely.
  5. In a separate bowl, whip together the mascarpone cheese and heavy cream until smooth. Gradually add sugar and espresso until well combined.
  6. Once the cake has cooled completely, unroll it gently and spread the creamy filling evenly across the surface.
  7. Roll up the cake again, this time without the parchment. Wrap it in plastic wrap and refrigerate for a couple of hours to set.
  8. Slice into rounds, dust with cocoa powder, and enjoy!

Notes

For a variation, use dairy-free alternatives like coconut cream instead of mascarpone.
