- 1 package puff pastry (store-bought or homemade)
- 2 cups fresh spinach (or 1 cup frozen, well-drained)
- 1 cup cheese (ricotta, feta, or Parmesan)
- 1 onion, diced
- 2 cloves garlic, minced
- Fresh dill or parsley, to taste
- 1 egg (for egg wash)
- Olive oil, for sautéing
- Salt and pepper, to taste
Instructions
- In a skillet, sauté diced onions in olive oil until translucent. Add minced garlic and fresh spinach, cooking until wilted. Remove from heat and let cool slightly.
- In a bowl, mix sautéed spinach and onion with cheese, herbs, and seasonings.
- On a floured surface, roll out the puff pastry and cut into 4×4 inch squares.
- Place a spoonful of filling in the center of each square. Fold and seal the edges, crimping with a fork.
- Brush the tops with egg wash.
- Preheat oven to 400°F (200°C) and bake pastries for 20-25 minutes until golden brown.
Notes
Ensure the pastry is cold before baking for best results. Do not overfill the pastries.
