Description

Delightful flaky pastries filled with sautéed spinach and creamy cheese, perfect for any occasion.


Ingredients

  • 1 package puff pastry (store-bought or homemade)
  • 2 cups fresh spinach (or 1 cup frozen, well-drained)
  • 1 cup cheese (ricotta, feta, or Parmesan)
  • 1 onion, diced
  • 2 cloves garlic, minced
  • Fresh dill or parsley, to taste
  • 1 egg (for egg wash)
  • Olive oil, for sautéing
  • Salt and pepper, to taste

Instructions

  1. In a skillet, sauté diced onions in olive oil until translucent. Add minced garlic and fresh spinach, cooking until wilted. Remove from heat and let cool slightly.
  2. In a bowl, mix sautéed spinach and onion with cheese, herbs, and seasonings.
  3. On a floured surface, roll out the puff pastry and cut into 4×4 inch squares.
  4. Place a spoonful of filling in the center of each square. Fold and seal the edges, crimping with a fork.
  5. Brush the tops with egg wash.
  6. Preheat oven to 400°F (200°C) and bake pastries for 20-25 minutes until golden brown.

Notes

Ensure the pastry is cold before baking for best results. Do not overfill the pastries.
