- 4 cups vegetable or chicken broth
- 1 to 1½ cups freshly grated Parmesan cheese
- 1 cup heavy cream

- Fresh herbs (thyme, parsley, or rosemary), for garnish
- Optional: Sautéed mushrooms or a splash of white wine
Instructions
- Sauté the chopped onion and minced garlic in butter over medium heat until translucent, about 5 minutes.
- Add broth and bring to a simmer.
- Gradually stir in Parmesan cheese until melted and incorporated.
- Pour in heavy cream and simmer gently for 10-15 minutes.
- Season with salt, pepper, and fresh herbs before serving.
- Serve warm, garnished with extra Parmesan and enjoy!
Notes
For best results, use freshly grated Parmesan and avoid boiling the soup too vigorously once cream is added.
