Description

Ingredients

  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons butter
  • 4 cups vegetable or chicken broth
  • 1 to cups freshly grated Parmesan cheese
  • 1 cup heavy cream
  • Salt, to taste
  • Pepper, to taste
  • Fresh herbs (thyme, parsley, or rosemary), for garnish
  • Optional: Sautéed mushrooms or a splash of white wine

Instructions

  1. Sauté the chopped onion and minced garlic in butter over medium heat until translucent, about 5 minutes.
  2. Add broth and bring to a simmer.
  3. Gradually stir in Parmesan cheese until melted and incorporated.
  4. Pour in heavy cream and simmer gently for 10-15 minutes.
  5. Season with salt, pepper, and fresh herbs before serving.
  6. Serve warm, garnished with extra Parmesan and enjoy!

Notes

For best results, use freshly grated Parmesan and avoid boiling the soup too vigorously once cream is added.
