Description

Delightful individual meatloafs, rich in flavor and perfect for family gatherings.


Ingredients

  • 1 pound ground beef
  • 1 finely chopped onion
  • 2 minced garlic cloves
  • 1/2 cup breadcrumbs or oats
  • 1 beaten egg
  • Ketchup (for topping)
  • Salt and pepper to taste
  • Dried herbs (thyme or oregano) to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Sauté the finely chopped onion and minced garlic in olive oil until soft and fragrant.
  3. In a mixing bowl, combine ground beef, sautéed onion and garlic, breadcrumbs or oats, beaten egg, and seasonings; mix until just combined.
  4. Grease a muffin tin or line with parchment cups.
  5. Scoop the meat mixture into each cup, filling about three-quarters full.
  6. Top each cup with a spoonful of ketchup, spreading evenly.
  7. Bake for 25-30 minutes or until cooked through with an internal temp of 160°F (70°C).
  8. Let cool for a few minutes before removing from tin and serve warm.

Notes

Ensure not to overmix the meat to maintain tenderness and allow resting time for easier removal from the muffin tin.
