Ingredients

  • 1 cup granulated sugar

  • 1 teaspoon baking powder
  • 1/4 cup milk (or dairy-free alternative)
  • 1 cup whipping cream
  • Powdered sugar (for dusting)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a jelly roll pan with parchment paper.
  2. In a bowl, sift together matcha powder, flour, and baking powder.
  3. In a stand mixer, beat the eggs and sugar on high speed until doubled in volume and pale (about 5-7 minutes).
  4. Gently fold in the dry ingredients with a spatula.
  5. Pour in the milk and mix gently.
  6. Spread the batter evenly on the prepared pan and bake for 12-15 minutes until it springs back when touched.
  7. Let the cake cool on a kitchen towel sprinkled with powdered sugar, then carefully roll it up while warm.
  8. Whip your cream until soft peaks form, add sugar and flavoring, unroll the cooled cake, spread the whipped cream, and re-roll tightly.
  9. Chill in the refrigerator for at least an hour before slicing.
  10. Serve dusted with powdered sugar or decorated with whipped cream and fresh berries.
