- 4 large eggs
- 1 cup granulated sugar
- 3/4 cup all-purpose flour (or gluten-free blend)
- 1 teaspoon baking powder
- 1/4 cup milk (or dairy-free alternative)
- 1 cup whipping cream
- Powdered sugar (for dusting)
Instructions
- Preheat your oven to 350°F (175°C) and line a jelly roll pan with parchment paper.
- In a bowl, sift together matcha powder, flour, and baking powder.
- In a stand mixer, beat the eggs and sugar on high speed until doubled in volume and pale (about 5-7 minutes).
- Gently fold in the dry ingredients with a spatula.
- Pour in the milk and mix gently.
- Spread the batter evenly on the prepared pan and bake for 12-15 minutes until it springs back when touched.
- Let the cake cool on a kitchen towel sprinkled with powdered sugar, then carefully roll it up while warm.
- Whip your cream until soft peaks form, add sugar and flavoring, unroll the cooled cake, spread the whipped cream, and re-roll tightly.
- Chill in the refrigerator for at least an hour before slicing.
- Serve dusted with powdered sugar or decorated with whipped cream and fresh berries.
