A warm and comforting casserole combining savory meatloaf and creamy mashed potatoes topped with cheese.

- 1 ½ pounds ground beef or turkey
- 4 large russet or Yukon Gold potatoes
- 1 cup shredded cheddar cheese
- 1 cup chopped mushrooms (cremini or button)
- 1 onion, finely chopped
- 2–3 cloves garlic, minced
- 1 large egg
- 1 cup breadcrumbs
- Salt, to taste
- Black pepper, to taste
- Worcestershire sauce, to taste
- Fresh parsley or chives, for garnishing
Instructions
- Peel and chop the potatoes, then boil them in salted water until tender (15-20 minutes).
- In a skillet, sauté the chopped onion in olive oil until translucent, then add minced garlic and mushrooms. Cook until golden brown and set aside.
- In a mixing bowl, combine ground meat, sautéed mixture, egg, breadcrumbs, and seasonings. Mix until just combined.
- Drain the potatoes, then mash with butter, milk, and salt until creamy.
- Preheat the oven to 350°F (175°C). In a greased baking dish, spread the meat mixture, then top with mashed potatoes and cheese.
- Bake for about 45 minutes until the cheese is bubbling. Broil for 2-3 minutes for a crispy top.
- Let it cool slightly, garnish with herbs, and serve.
Notes
For lighter variations, use ground turkey and reduce cheese. Cauliflower can be substituted for potatoes for a keto-friendly option.
