Description

Delightfully flaky Lemon Croissants infused with zesty lemon flavors, perfect for brunch or an afternoon treat.


Ingredients

  • 3 1/2 cups all-purpose flour
  • 1 cup unsalted butter, high-quality, chilled
  • 1 packet active dry yeast
  • 1 cup warm milk
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 2 tablespoons lemon zest
  • 1/4 cup lemon juice
  • 1 egg (for egg wash)
  • Lemon curd (optional filling)

Instructions

  1. Prepare the Dough: In a large mixing bowl, combine warm milk, sugar, and yeast. Allow to sit until foamy, about 5-10 minutes. Add flour, salt, and melted butter; mix until it forms a shaggy dough. Knead for about 5-7 minutes until smooth.
  2. Chill and Roll: Let the dough rise in a warm place until doubled, roughly 1-2 hours. Prepare your butter block by chilling it between sheets of parchment paper until pliable.
  3. Layer the Butter: Roll out the dough into a rectangle and place butter block in the center. Fold dough over butter and seal edges. Roll out and fold into thirds. Chill for 30 minutes and repeat two more times.
  4. Cut and Shape the Croissants: Roll out the dough into a long rectangle. Cut into triangles, gently stretch, then roll from base to tip to shape.
  5. Proof and Bake: Place on a lined baking sheet, allowing to proof for about an hour until puffy. Brush with egg wash and bake at 400°F (200°C) for 15-20 minutes, until golden and flaky.
  6. Add Lemon Zest and Curd: Once cooled, add lemon curd inside and dust with powdered sugar.
  7. Tips: Keep ingredients cold for optimal flakiness. Allow enough time for resting and rising.

Notes

For best results, work quickly and keep the butter chilled. You can substitute bread flour for a chewier texture if desired.
