Dulce de Leche Cheesecake Bars

Description

Delightful cheesecake bars with a buttery graham cracker crust, creamy cheesecake filling, and swirls of rich dulce de leche.


Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup butter, melted
  • ¾ cup granulated sugar, divided
  • 16 oz cream cheese, softened
  • 1 cup dulce de leche, divided
  • 3 large eggs
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix graham cracker crumbs, melted butter, and ¼ cup sugar until combined. Press into the bottom of a greased baking dish.
  3. Bake the crust for 10 minutes until lightly golden. Cool while preparing the filling.
  4. In a mixing bowl, beat cream cheese until smooth. Gradually add remaining sugar, eggs, and vanilla, blending until creamy.
  5. Fold in half of the dulce de leche into the cream cheese mixture, leaving some swirls. Pour over the cooled crust.
  6. Drizzle remaining dulce de leche on top and swirl with a knife.
  7. Bake for 30-35 minutes or until set around the edges but slightly wobbly in the center.
  8. Cool the cheesecake at room temperature, then refrigerate for at least 4 hours.
  9. Slice into bars and serve.

Notes

For a smoother cut, use a hot knife dipped in warm water.
