Delightful cheesecake bars with a buttery graham cracker crust, creamy cheesecake filling, and swirls of rich dulce de leche.

- 1 ½ cups graham cracker crumbs
- ½ cup butter, melted
- ¾ cup granulated sugar, divided
- 16 oz cream cheese, softened
- 1 cup dulce de leche, divided
- 3 large eggs
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix graham cracker crumbs, melted butter, and ¼ cup sugar until combined. Press into the bottom of a greased baking dish.
- Bake the crust for 10 minutes until lightly golden. Cool while preparing the filling.
- In a mixing bowl, beat cream cheese until smooth. Gradually add remaining sugar, eggs, and vanilla, blending until creamy.
- Fold in half of the dulce de leche into the cream cheese mixture, leaving some swirls. Pour over the cooled crust.
- Drizzle remaining dulce de leche on top and swirl with a knife.
- Bake for 30-35 minutes or until set around the edges but slightly wobbly in the center.
- Cool the cheesecake at room temperature, then refrigerate for at least 4 hours.
- Slice into bars and serve.
Notes
For a smoother cut, use a hot knife dipped in warm water.
