Buttery, flaky croissant bites filled with sautéed mushrooms, garlic, and herbs, perfect for any gathering.

- Day-old croissants
- 1 cup cremini or button mushrooms, diced
- 2 cloves fresh garlic, finely chopped
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon fresh thyme, chopped
- 1/2 cup Gruyère or mozzarella cheese, shredded
- 2 tablespoons butter, for brushing
- Salt and pepper, to taste
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet, melt a tablespoon of butter over medium heat. Add the finely chopped garlic and sauté for about 30 seconds until fragrant. Toss in the diced mushrooms and cook until soft and golden, about 5-7 minutes. Season with salt, pepper, and herbs to taste.
- Unroll the croissant dough and cut each croissant into thirds, lengthwise. Place a spoonful of the mushroom filling and a sprinkle of cheese on the wide end of each triangle. Roll it up to keep the filling inside.
- Place the filled croissants on a baking sheet lined with parchment paper and brush the tops with melted butter.
- Bake for 15-20 minutes, or until puffed and golden brown.
- Let cool slightly before serving, and consider a side of marinara or garlic aioli for dipping.

For a lighter version, consider using whole-grain croissants or lower-fat cheese options.
