A comforting and creamy casserole with buttery noodles, tender tuna, and sautéed mushrooms, perfect for family gatherings.


Ingredients

  • 8 oz egg noodles
  • 2 cans tuna, drained
  • 8 oz fresh white or cremini mushrooms, sliced
  • 1 can cream of mushroom soup
  • 1 cup sour cream
  • 1 cup shredded sharp cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 tsp dried thyme
  • 1 tsp dried parsley
  • 1 cup breadcrumbs
  • 1 tbsp butter (for sautéing mushrooms)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cook the egg noodles in boiling salted water until al dente, drain, and set aside.
  3. Melt butter in a skillet over medium heat and sauté the mushrooms until golden brown, about 5-7 minutes. Add minced garlic for the last minute.
  4. In a large bowl, combine cream of mushroom soup, sour cream, thyme, and parsley. Fold in the sautéed mushrooms and tuna.
  5. Stir in the drained noodles until well coated.
  6. Transfer the mixture to a greased baking dish and sprinkle with cheddar, mozzarella, and breadcrumbs.
  7. Bake for 25-30 minutes until the top is golden brown and bubbly.
  8. Let cool for a few minutes before serving.

Notes

This casserole can be modified with peas, carrots, or substituted with chickpeas for a vegetarian option.
