- 8 oz egg noodles
- 2 cans tuna, drained
- 8 oz fresh white or cremini mushrooms, sliced
- 1 can cream of mushroom soup
- 1 cup sour cream
- 1 cup shredded sharp cheddar cheese
- 1 cup shredded mozzarella cheese
- 1 tsp dried thyme
- 1 tsp dried parsley
- 1 cup breadcrumbs
- 1 tbsp butter (for sautéing mushrooms)
Instructions
- Preheat your oven to 350°F (175°C).
- Cook the egg noodles in boiling salted water until al dente, drain, and set aside.
- Melt butter in a skillet over medium heat and sauté the mushrooms until golden brown, about 5-7 minutes. Add minced garlic for the last minute.
- In a large bowl, combine cream of mushroom soup, sour cream, thyme, and parsley. Fold in the sautéed mushrooms and tuna.
- Stir in the drained noodles until well coated.
- Transfer the mixture to a greased baking dish and sprinkle with cheddar, mozzarella, and breadcrumbs.
- Bake for 25-30 minutes until the top is golden brown and bubbly.
- Let cool for a few minutes before serving.
Notes
This casserole can be modified with peas, carrots, or substituted with chickpeas for a vegetarian option.
