Delightful soft dough bites filled with gooey mozzarella cheese, perfect for snacking and bringing friends and family together.
Ingredients

- 2 ½ cups all-purpose flour (or whole wheat flour)
- 1 cup warm water
- 1 packet active dry yeast
- 1 tablespoon brown sugar
- 1 teaspoon salt
- 1 cup mozzarella cheese, cubed
- ¼ cup baking soda
- 2 tablespoons melted butter (for brushing)
- Coarse salt (for sprinkling)
Instructions
- In a large bowl, combine warm water, sugar, and yeast. Stir gently and let sit for 5-10 minutes until frothy.
- In another bowl, mix flour and salt. Add frothy yeast mixture and stir until dough begins to form. Knead for 5-8 minutes until smooth.
- Place dough in an oiled bowl, cover with a damp cloth, and let rise in a warm area for about 1 hour.
- After rising, punch down the dough and turn it out onto a floured surface. Pinch small pieces, flatten, and place a cheese cube in the center before wrapping the dough around it.
- Boil water in a large pot, add baking soda, and boil the pretzel bites for 30 seconds each.
- Preheat oven to 425°F (220°C) and place boiled bites on a parchment-lined baking sheet. Brush with melted butter and sprinkle with coarse salt.
- Bake for 12-15 minutes until golden brown. Let cool slightly before serving.
Notes
For a sharper flavor, consider using cheddar cheese. Always check baking time as ovens may vary.
