- 1 package puff pastry (preferably all-butter)
- 2 cups fresh berries (strawberries, blueberries, raspberries)
- 1/4 cup granulated sugar
- 2 tablespoons cornstarch
- 1 tablespoon lemon juice
- 1 egg (for egg wash)
Instructions
- Preheat your oven to 400°F (200°C).
- In a medium bowl, combine the berries, sugar, cornstarch, and lemon juice. Toss gently to coat.
- Roll out the puff pastry on a floured surface to about 1/8 inch thick.
- Cut the pastry into squares or keep it as a rectangle for a larger tart.
- Add a generous scoop of the berry mixture to the center of each piece, leaving space for sealing.
- Seal the pastry by folding it over for turnovers or slicing slits on the top for a tart.
- Brush with an egg wash for a golden finish.
- Bake for 20-25 minutes until puffed and golden-brown.
- Allow to cool slightly before serving, optionally garnished with powdered sugar or a drizzle of cream.
Notes
Keep ingredients chilled for flakiness. Avoid overfilling the pastry to prevent sogginess.
