Description

A refreshing and buttery side dish featuring green beans or asparagus, garlic, and a touch of lemon zest and Parmesan cheese.


Ingredients

  • Fresh green beans or asparagus
  • 23 cloves of garlic, finely minced
  • Juice and zest of 1 lemon
  • 1/2 cup freshly grated Parmesan cheese
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Rinse and trim the fresh veggies. Mince the garlic and zest the lemon.
  2. In a large skillet, heat the olive oil over medium heat. Add the green beans or asparagus and sauté for 5-7 minutes until tender but still crunchy.
  3. Add the minced garlic and sauté for an additional minute. Then add the lemon juice and zest.
  4. Stir in the grated Parmesan cheese until melted. Season with salt and pepper to taste.
  5. Serve immediately, optionally garnished with more lemon zest or fresh herbs.

Notes

For varied flavors, try adding fresh herbs or a knob of butter towards the end of cooking for richness. Avoid using pre-grated cheese for the best results.
